This Buckingham Palace Cookie Recipe Deserves a Spot in Your Holiday Lineup

As the colder months drift closer and closer, we start thinking about all the sweets and treats we’ll be baking up all holiday long. Peppermint cheesecake? Check. 10 batches of gingerbread cookies? Check. Bread pudding? Oh, you can count on it. But sometimes, we’d like something a bit more…noble.

Which is why we’re definitely trying the official Buckingham Palace cookie recipe this holiday season. Not only is it sweet and simple, but it’s also royally delicious.

How to Make the Buckingham Palace Cookie Recipe


We love a new cookie recipe, and we know one that’s loved by the Royal Family won’t disappoint. Here’s how to make it, per the Royal pastry chefs themselves!

Ingredients

  • 115 grams mixed peel (or approximately 3/4 cup)
  • 360 g icing sugar (approx. 1 3/4 cup)
  • 85 g egg white (approx. 2 egg whites)
  • 20 g lemon juice (approx. 4 tsp)
  • 300 g ground almonds (approx. 2 3/4 cups)
  • ½ lemon, zested
  • 12 g ground cinnamon (approx. 1 3/4 Tbsp)
  • ¼ tsp ground cloves

Instructions

Step 1: Make the meringue

Using a hand mixer or food processor, blend the mixed peel until it reaches a paste-like consistency. Then, whip together the icing sugar, egg white and lemon juice until it forms a soft meringue. If you’re new to making meringue, take a look at this guide to meringue before you start. Separate about 1/3 of the meringue and set aside.

Step 2: Make the dough

Next, fold in the rest of the ingredients into the remaining 2/3 of meringue, then knead the mixture until it reaches a dough-like consistency

Step 3: Roll out the dough

Once a dough has been achieved, place it flat on a parchment-lined baking tray, cover with another sheet of parchment paper and roll out it with a rolling pin until it’s about 1/3 of an inch thick.

Step 3: Let the dough rest

Remove the top layer of parchment and spread the remaining meringue on top as flat as possible. Leave the dough to rest in the fridge for about an hour.

Step 4: Cut out your cookies

Next is the fun part—the shape cutting! Use a star or diamond-shaped cookie cutter, or take fate into your own hands and use a knife.

Step 5: Bake

After you’ve got your shapes, transfer them to a lined baking sheet and bake in the oven for 12-15 minutes at about 325° F. When the edges start to come up slightly, your cookies are ready. Leave to cool for about 30 minutes. Enjoy!
