When cleaning fresh broccoli, I don’t throw away the stalks like many people do. After washing the broccoli, I use a vegetable peeler to remove the tough outer layer from the stalks. I chop the florets and peeled stalks, then drop them into boiling water for just 5 minutes. I drain them and immediately run them under cold water to stop the cooking process. Then I place meal-size portions in freezer bags and store them in the freezer. This way, I always have broccoli ready for almost any recipe, or just to heat and enjoy as a side dish.
