But when it comes to the kids, sometimes they deserve an extra-special treat. These super-cute desserts are the best option for your wee ones as they’re smaller portions, making them perfect for little hands. Plus, they’re quick and easy, so you’ll be able to enjoy your party without being stuck in the kitchen.
1. Animal Ice Cream Sandwiches
Sandwich a spoonful of softened ice cream (vanilla bean or strawberry is great) between two frosted animal cookies. Let the animals chill in the freezer until the ice cream hardens. Then enjoy these bite-sized treats by the handful.
You can even color coordinate the cookies and ice cream by sandwiching vanilla ice cream between two pink cookies and strawberry ice cream between two white cookies.
2. Mini Cast-Iron Cookie
Lightly butter a cast-iron skillet and then press cookie dough into the skillet until it’s about half full. Bake at 350 for 18-20 minutes, or until your cookie is looking golden-brown. After letting it cool for a minute or two, top that gooey treat with a hearty scoop of ice cream and your favorite dessert toppings. Sprinkles? Yes, please.
3. Strawberry Overload Shake
Blend strawberry ice cream, strawberry wafer cookies and strawberry milk for a perfectly pink shake. Take it to the next level by topping it with whipped cream, a butter cookie, more wafer cookies and a dash of sprinkles!
