I would love to replace the sugar in my favorite oatmeal cookie recipe with honey. Is there a formula for converting sugar to honey in a recipe? —S.H., St. Paul, Minnesota

If you like to use honey, it’s best to choose recipes that were specifically developed using that ingredient. But with a little experimentation, you can substitute honey for sugar in some recipes. While there is no \”formula\” for substituting the two, here are a few general guidelines for using honey in baked goods:

  • Since honey is sweeter than sugar, you can use less to achieve the same level of sweetness.
  • Reduce any liquid called for in the recipe by 1/4 cup for each cup of honey used. At the same time, add 1/2 teaspoon baking soda for each cup of honey used.
  • To prevent your baked goods from becoming too brown, reduce the oven temperature by 25°.
