What’s in Kate Middleton’s Watermelon Salad?
This salad has only a handful of key ingredients, according to @kalejunkie:
- 3 cups watermelon, cubed
- 1 English cucumber, chopped
- 1 avocado, chopped
- 1/2 cup feta cheese, crumbled
- 1 bunch mint, chopped
- 1/4 cup olive oil
- Juice of 1 lime
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Then all you need to do is toss everything in a bowl, dress with the olive oil, lime and apple cider vinegar, and finish off with salt and pepper. It’s so easy to make!

This salad works because the ingredients marry together so well. The creamy texture of the avocado is a wonderful complement to the crunchiness of the watermelon and cucumber.
