Is it safe to eat baked potatoes when they have a hint of green in the skins? —L.P., Cleveland, OhioIt’s best not to. The green tint comes from high levels of solanine, which can be toxic when eaten in quantity.
Although it is unlikely that enough solanine would be consumed to cause harm, it is best to peel or cut off the green portion before eating the potato.
