A.M. Delight Muffins

We've been making these muffins daily since we opened back in 1987. The recipe is a combination of our favorites from home. We bake at least 30 dozen muffins for the shop every morning.—Anne Maher, Rockland, Maine

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup canola oil
  • 1/2 cup milk
  • 1-1/2 teaspoons vanilla extract
  • 2 cups chopped peeled apples
  • 2 cups grated carrots
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup raisins
  • 1/2 cup sliced almonds

Directions

  • In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 20-25 minutes or until muffins test done.
