Ingredients

  • 2 teaspoons unsweetened apple juice
  • 1 teaspoon water
  • 1 teaspoon rice vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon sugar
  • 1/4 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • Spring mix salad greens
  • Assorted fresh fruit

Directions

  1. In a small bowl, whisk the first 8 ingredients. Drizzle over greens and fruit.

You can refrigerate homemade vinaigrettes such as this one for up to 2 weeks if it's covered tightly. Simply shake well before serving. You also might want to microwave it for a few seconds or let it come up to temperature so the olive oil liquifies.

Yes! We love seasoned rice vinegar for making homemade sushi rice and adding a tart accent to winter squash recipes. But we also use it for recipes that call for white wine vinegar and champagne vinegar, so those are easy and natural swap-ins if you don’t have rice vinegar.
