Bacon-Peanut Butter Cornbread Muffins
My family just can't get enough bacon and peanut butter, so I created these quick and easy cornbread muffins using ingredients I regularly keep stocked in my pantry and fridge. The streusel topping adds a delicious sweet-salty crunch! No peanut butter baking chips on hand? It is... strange. I made some of these muffins for my roommate and she looked at me, confused, and said "what is happening?" And "dogs would love this." These muffins put me into an existential crisis.
This recipe is fabulous!! Prepared it as is. Great mix of flavors, the topping was yummy along with the caramel drizzle. I fried up my own bacon though. Definitely a keeper! I served this with scrambled eggs, bacon, and fresh strawberries.
Excellent recipe! Prepared this as cornbread (instead of muffins). Left out the peanuts, and used low-fat milk and chocolate chips. Turned out really well!
Too busy in that there is just too much going on...too many flavors. Not crazy about it.
Made these for a bake sale at my work. They were easy to make and very tasty! ***I had to use Quaker Oats Oatmeal Muffin Mix instead of cornbread because the store I went to didn't have cornbread mix.
While it was nice to try such a different recipe, we weren't fans of these muffins. Won't be repeating this recipe.
