Baked Blueberry Pancake

For a quick breakfast, Norna makes the pancake while fixing supper the night before, then cuts it into squares. The next morning, she tops them with butter and syrup before placing them in the microwave. This innovative way to make pancakes takes most of the fuss out of making breakfast.   • 2 cups pancake mix
  • 1-1/2 cups fat-free milk
  • 1 large egg
  • 1 tablespoon canola oil
  • 1 teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  • Butter and maple syrup


  • In a large bowl, combine the pancake mix, milk, egg, oil and cinnamon just until blended (batter will be lumpy). Fold in blueberries.
  • Spread into a greased 15x10x1-in. baking pan. Bake at 400° for 10-12 minutes or until golden brown. Serve with butter and syrup.
Editor's Note
If using frozen blueberries, use without thawing to avoid discoloring the batter.

    Yum! Super quick and easy. The only change I made was using 1/2 milk, 1/2 buttermilk. I also used a 9x13 pan...400 degrees 18 min. This would be delicious with apple or strawberry too.

    I used almond milk and egg substitute in the recipe. I baked for 15 minutes but it never turned golden brown. However it tasted great. MY husband didn't like it as well as regular pancakes so more for me. I can freeze the leftovers.

    Eccellent! I added more vanilla and blueberries and it was delicious. It cooked in a 13x9-inch pan for 19 minutes. We will be enjoying this again. I highly recommend this delicious recipe. Volunteer Field Editor

    My family devoured these! I added more blueberries and some vanilla but otherwise followed the recipe. I also used a 9x13 pan since I had it on hand. Next time, I will make 2 pans!

    This didn't taste bad, but we didn't enjoy it very much either. It was easy - I will give it that. I just didn't think it had a lot of taste.

    I don't have a pan that size, so I used a 9x13 pan. I had to inrease the cooking time by a few minutes, but it was absolutely delicious. Thank you.
