Baked Chicken and Mushrooms

I made up this dish years ago, and it still remains the family's favorite healthy baked chicken recipes. It's a fast weeknight meal, but the fresh mushrooms and sherry make it special enough for a weekend dinner party. —Lise Prestine of South Bend, Indiana

Ingredients

  • 6 boneless skinless chicken breast halves (4 ounces each)
  • 1/4 teaspoon paprika
  • 1/2 pound fresh mushrooms, sliced
  • 1 tablespoon butter
  • 1/2 cup sherry or chicken broth
  • 3 green onions, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup shredded part-skim mozzarella cheese

Directions

  • Arrange chicken in a 13x9-in. baking dish coated with cooking spray. Sprinkle with paprika. Bake, uncovered, at 350° for 15 minutes.
  • Meanwhile, in a large nonstick skillet, saute mushrooms in butter for 5 minutes. Add the sherry or broth, green onions, garlic, salt and pepper. Bring to a boil. Pour over chicken.
  • Bake until a thermometer reads 165°, 10-15 minutes longer. Top with cheese. Bake for 3-5 minutes or until cheese is melted.

    Absolutely yummy!! My hubby said it’s a keeper. I would like to try it with sherry next time. I used portabella mushrooms.

    I was a bit hesitant to try because my chicken always comes out dry, ?????? but after making this tonight it came out so good!!! So moist and full of flavor ?????? will be making again in the future !

    Very easy and delicious recipe. I used sweet onions instead of green onions and saute the onions with the mushrooms, before adding to the chicken. My husband loved it and will make it again.

    Bone dry chicken. Should have been browned in the pan with mushrooms, etc. I think then it could go into the oven and would retain some of the moisture.

    Made this last night, husband asked to keep it in rotation. Seasoned chicken with salt and pepper before baking. Used marsala wine (because that's what I had). Very easy recipe, tasted like I slaved over the stove for hours. Thank you Lise!

    I made this last night. It was not only easy but the whole family loved it. After reading some of the reviews, I did sprinkle Everglades Fish and Chicken seasoning on it when I put it in the oven. I also used vegetable broth and a splash of Sherry. It was great for a weeknight meal. Quick and Easy! Thank you for sharing I will definitely be making again!

    Like others have stated, a bit bland. I would definitely change the cheese to parmesan and maybe add a dash or two of balsamic vinegar to help thicken the sauce. Definitely on the rotation for the future.
