Ingredients

  • 4 large potatoes, cubed
  • 2 pounds smoked sausage, cut into 3/4-inch pieces
  • 2 bottles (12 ounces each) beer
  • 2 cups reduced-sodium chicken broth
  • 2 ribs celery, sliced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1/2 teaspoon minced fresh thyme
  • 1/4 teaspoon minced fresh rosemary
  • 2 tablespoons butter, cubed

Directions

  1. In a 6-qt. slow cooker, combine the first 10 ingredients. Dot with butter. Cook, covered, on low until vegetables are tender, 8-10 hours. Discard bay leaves before serving.
