I've got a new batch freezing right now! I upped the amount of honey in them by quite a bit (the last batch was good, but not quite sweet enough) to about 1/4c, and used almond milk this time (the soy milk was fantastic in it last time, but I thought I'd mix it up a little and see which I like best. :)) These come out so pretty and the bonus is that since they're mostly fruit and healthy dairy-free milk, with just a little local wildflower honey per serving, they make a reasonably healthy snack. They'd be deliciously sinful using a bit of real coconut milk, too, I bet. Gotta give that one a try soon.
