Blue Cheese Flat Iron Steak

This is one of my favorite flat iron steak recipes. If you haven't already enjoyed the rich, creamy pairing of blue cheese with your favorite steak, stop reading and get cooking! Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • 1-1/4 pounds beef flat iron steak or top sirloin steak (1 inch thick)
  • BLUE CHEESE BUTTER:
  • 1/4 cup crumbled blue cheese
  • 3 tablespoons butter, softened
  • 1 tablespoon minced fresh chives
  • 1/8 teaspoon pepper

Directions

  • In a shallow dish, combine the first seven ingredients. Add beef; turn to coat. Cover and refrigerate 30 minutes.
  • In a small bowl, mix blue cheese, butter, chives and pepper; set aside. Drain beef, discarding marinade.
  • Grill steaks, covered, over medium heat or broil 4 in. from heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with blue cheese butter.

What is the difference between flat iron steak and flank steak?

Flat iron steak comes from the shoulder of a cow and has a little more marbling of fat, which adds more flavor and tenderness. Flank steak comes from the belly of the cow and tends to be a leaner cut.

Is flat iron steak tender?

A properly grilled flat iron steak can come out as tender as a tenderloin steak. You’ll get the most tenderness when grilled no higher than medium. It has a decent amount of marbling and rich flavor that makes this cut of meat a delicious option.

Is flat iron steak expensive?

Flat iron steak is an inexpensive option that compares well to more expensive steaks, but you can alternatively use another flat steak option like skirt steak or flank steak.
