Breaded Ranch Chicken

A crunchy coating of cornflakes and Parmesan cheese adds delectable flavor to this zesty ranch chicken. The golden, crispy chicken is a mainstay dish I can always count on. —Launa Shoemaker, Landrum, South Carolina
  • Total Time
Prep: 10 min. Bake: 45 min.
  • Makes
    8 servings

  • 1/4 cup unsalted butter, melted
  • 3/4 cup crushed cornflakes
  • 3/4 cup grated Parmesan cheese
  • 1 envelope ranch salad dressing mix
  • 8 boneless skinless chicken breast halves (4 ounces each)

  • Place butter in a shallow bowl. In another shallow bowl, combine the cornflakes, cheese and salad dressing mix. Dip chicken in butter, then roll in cornflake mixture to coat.
  • Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° until a thermometer reads 165°, about 45 minutes.

Test Kitchen Tips
  • Unless otherwise specified, Taste of Home recipes are tested with lightly salted butter. Unsalted, or sweet, butter is sometimes used to achieve a buttery flavor, such as in shortbread cookies or buttercream frosting. In these recipes, added salt would detract from the buttery taste desired.
  • In Europe, Parmigiano-Reggiano and Parmesan are considered the same cheese. But in the U.S., Parmesan is a generic term that may not come from Italy’s Parmigiano-Reggiano region. Using the authentic Italian cheese (in a lesser amount than the original’s ½ cup) ensures a cheesy richness in the makeover with less fat and calories.

I've been trying a variety of chicken dishes and this one rises to the top. It flavorful and juicy, and so easy to make. I used the thin sliced breasts so I decreased the cook time by about 10 minutes. Next time I will make less breading since I only used four breasts.

Family loves the flavor and moistness. I used seasoned Panko crumbs. Pored the rest of mixture on top. Great recipe. Thanks.

I'd used Panko bread crumbs; used nearly 3 lbs. of chicken breasts/thighs. I'd baked 1-1/2 hours at 350o F., used Perdue brand chicken. This chicken was delicious!

This recipe sounded amazing. I really wanted to make it for dinner but did not have corn flakes. In this "stay at home" time, could not just run out to the store like I was used to, so I decided to use the Great Grains cereal (Pecan) that was on hand. I crushed the cereal very fine and then added the cheese and ranch dressing packet. AMAZING!!!!! This recipe has become our favorite chicken recipe.

I'm on a low carb diet right now and I used pork rind crumbles instead of the cornflakes. Took the carbs WAY DOWN.

We had this delicious recipe tonight and declare it a 5-star winner. I made just a few minor changes. I halved it for the two of us with a little left over. I could not find corn flake crumbs anywhere but did not want a big box of cereal so I used dry bread crumbs which I had on hand. I used chicken tenderloins that I already had and they were delicious. No other changes. We cleaned our plates. Volunteer Field Editor
