Burrito Bake

Back when I was in college, my roommate would frequently make this economical baked burrito casserole. It's so easy to put together, and one serving goes a long way. —Cindee Ness, Horace, North Dakota
  • Total Time
Prep: 25 min. Bake: 30 min.
  • Makes
    6 servings

  • 1 pound ground beef
  • 1 can (16 ounces) refried beans
  • 1/4 cup chopped onion
  • 1 envelope taco seasoning
  • 1 tube (8 ounces) refrigerated crescent rolls
  • 1 to 2 cups shredded cheddar cheese
  • 1 to 2 cups shredded part-skim mozzarella cheese
  • Optional toppings: chopped green pepper, shredded lettuce, chopped tomatoes and sliced ripe olives

  • Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Add beans, onion and taco seasoning.
  • Unroll crescent roll dough. Press onto bottom and up the sides of a greased 13x9-in. baking dish; seal seams and perforations.
  • Spread beef mixture over crust; sprinkle with cheeses. Bake, uncovered, until golden brown, about 30 minutes. If desired, sprinkle with toppings.

Test Kitchen Tips
  • Using lean ground beef in the burrito instead of beef that’s 80% lean saves 45 calories per 4-ounce serving of beef. Lean ground beef is also 29% lower in saturated fat.
  • Sharp cheddar cheese has been aged longer than regular cheddar. As cheese ages, its flavor becomes more pronounced. Using aged cheese in a recipe can add complexity and rich flavor, even to humble favorites like mac ’n’ cheese.

This tasted great - crescent rolls make everything taste better! I served it with the suggested toppings and sour cream too.

We loved the crust and cheese. Next time I’m planning to use a thinner layer of refrained beans and less taco seasoning. We found it a bit salty for our taste with a full package of seasoning. You can add anything you normally would to a taco and it’d be wonderful! Loved the base recipe enough to give it five stars!

Made this with low carb tortillas and added a can of Southwest corn. Also used pepper jack cheese instead of mozzarella. It came out so delicious that my husband said it’s a keeper. Topped with lettuce, sliced olives and diced tomatoes. Used low fat sour cream and salsa as well - delicious!

I make this quite often as it is one of my husband's favorites. The only change I make is I use the crescent roll sheet.

I really enjoy the crescent roll base in this dish. It doesn't taste like crescent roll. With the meat and beans, it takes on a whole new delicious flavor. This is an easy recipe that the kids can make, too. I made my own mix for the taco seasoning. This is a family favorite.

I made this last night and, yeah, I didn't expect much - just something quick to make. Wasn't too sure about the crescent roll crust. Well, this was delicious! Tonight we're having leftovers. I'll be making this often. Thank you for publishing this recipe!! ??????

We love tacos and burritos and this was a delicious change. Very fast and easy to make and you can switch up your toppings. Nice one to make after working all day.
