This jelly is easy to prepare and taste great! It's perfect for the holidays!
I boil down apple peels and cores (which creates some natural pectin), drain the juice rather than use apple juice. Turns out perfect every time. If you have a hard time finding the red hot candies like I did, you can use cinnamon oil.
This is one of my favorite jellies to make and give to family and friends. I make it go further by using 4 oz. jars. I use freshly pressed apple cider from one of our local orchards in place of regular apple juice and I add in some ground cinnamon. I usually have one or two jars that don’t set, but I just replace the lid and ring and reprocess. Some of students that are skeptical at first, really like this jelly and ask for their own jars instead of just a taste on toast from the jar I bring for my breakfast toast.
Overall the jelly tastes great. My problem is out of 4 batches none of them set up. I don't know what I am doing wrong as I followed the recipe exactly. Maybe next time I'll add more pectin.

First of all, this is beautiful jelly and it tastes delicious! However, out of 13 jars, not a single one of mine set. My aunt makes this all the time and I asked her what she does differently. She says she always water baths for 10 minutes. Next time I will try this. It took me a LOT longer than 15 min to prep, cook, and can (because I can only do so many jars in the water bath at a time) but I did follow the directions! All of my jars sealed, but I'm left with beautiful, delicious, thin liquid over 24 hours later. If I try this again, I will boil a little longer and do the 10 minute water bath.
I used red hot jolly rancher candies. It worked out perfectly . I doubled the recipie but cut out 1 cup of sugar due to the sweetness of the candy. Excellent!!!!!
I loved the simplicity - no fruit to chop/peel etc. However, the first batch did not set up even with some extra pectin and more boiling. The second batch turned out ok, using twice as much pectin and longer boiling. I didn't taste any apple at all - only cinnamon - so next time I will use less of the Red Hots.
I have made this for about 7 years now, since I found it on Taste of Home website. I have made it up for Christmas craft fairs and sold it, and also made it for Christmas presents. Everyone loves it. Since I love the flavor of the red hots so much, I at least double the amount of red hots, and sometimes have tripled it. Or I have put about a cup of red hots and added in about 8 to 10 of those round clear red cinnamon disk candies. So good! I have only had it not gel up just once. I think it was because my pectin was old. I also boil it for at least two minutes instead of one, after the sugar gets mixed in well and the jelly has returned to the rolling boil. It's a beautiful color, so pretty in a jelly jar!
I'M NO COOK! This recipe is YUM and EASY!! Honestly, it rare for the cooking challenged to do anything easy and yummy in the kitchen. But this works! My friend used apple cider in place of the apple juice and it worked great! Love the taste! A
