Caramel Apple Scones

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons cold butter
  • 1/4 cup plus 2 tablespoons half-and-half cream
  • 1 large egg yolk
  • 1-1/2 teaspoons vanilla extract
  • 2/3 cup shredded peeled apple
  • 1 tablespoon caramel ice cream topping


  • In a small bowl, combine the flours, brown sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the cream, egg yolk and vanilla; add to dry ingredients just until moistened. Stir in apple. Turn onto a floured surface; knead 10 times.
  • Pat into a 5-in. circle. Cut into 4 wedges. Separate wedges and place on an ungreased baking sheet. Bake at 400° for 15-20 minutes or until golden brown. Cool for 10 minutes. Drizzle with caramel topping.

    I made this recipe just this morning. I have to agree with the last reviewer, my dough was very wet and sticky. I ended up baking it anyway, just like that, formed into a round circle with parchment paper lining. I baked for 20 minutes when it was hard enough to cut into triangles. I cut it, separated, then baked 4 more minutes. It didn’t come out like the dry consistency of a scone, it was softer like cake but it was a actually really good! I was so surprised! I drizzled it with the Carmel sauce and it gave it enough sweetness. I was also surprised there was no cinnamon in the recipe so I may add that next time. I also used a Granny Smith apple so I did taste the apple which was good. My husband loved it so I’ll be making it again.

    This was so wet and sticky that I had to add a lot of flour when kneading the dough that the apple flavor was lost. It also made them thicker and more biscuit-like I'll not make this again.

    I added cinnamon (about 3/4 tsp) to the dry ingredients, which kicked the flavor up a notch and really compliments the apples. Also did not measure the apples, just used one medium sized apple, peeled and grated. Good recipe!

    They were very good except I couldn't taste the apple/caramel very well. I would add more flavor
