Cheesy Fiesta Beef Casserole

Over the years I’ve tweaked this recipe to end up with a wonderful, quick weeknight meal. Feel free to spice it up with jalapenos, if you prefer a little more heat. —Joan Hallford, North Richland Hills, Texas

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup picante sauce
  • 1/2 teaspoon chili powder
  • 1 can (10-1/2 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
  • 1 can (10 ounces) diced tomatoes and green chiles, undrained
  • 1 can (4 ounces) chopped green chiles
  • 1 package (9-3/4 ounces) nacho-flavored tortilla chips or plain tortilla chips, crushed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional: Cubed avocado and sour cream


  • In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in beans, picante sauce and chili powder.
  • In a bowl, combine soup, tomatoes and green chiles. In a lightly greased 2-1/2-qt. baking dish, layer half the chips, beef mixture, soup mixture and cheeses. Repeat layers.
  • Microwave on medium-high, uncovered, until heated through and cheese is melted, about 12 minutes. If desired, top with avocado and sour cream.

  • Nacho-flavored tortilla chips add fabulous flavor to this casserole without a lot of effort.
  • Increase the heat by using medium picante sauce and diced jalapenos instead of green chiles.

      It was awesome! Only changes I made was instead of chili powder & added 1 pkg. taco seasoning mix to add a bit more spice & baked it in a 350* oven for 15 minutes until the cheese melted. Topped it with diced avocado for a creamier finish. Definitely a keeper.

      Used plain tortilla chips and based on a comment about it being bland, I swapped the chili powder for 2 Tbsp Mexican seasoning blend (1 packet of you're not using home made). The flavor and textures were good and my husband went back for seconds. I used medium picante sauce and it still needed more heat so I would use pickled jalapenos next time. Good recipe and easily customizable.

      Have not tried yet but can you cook in the oven instead of the microwave?

      My family has already requested that I make this again. I did improvise a little...I used cream of mushroom soup because it’s what I had and I added red & yellow pepper strips. I think I’m going to try it with ground chicken next time. Thanks for a great addition to my casserole collection.

      Made the recipe as is and it was delicious! Whole family loved it! I prepared it in a 9x13 glass dish and it all fits perfectly! I also heated it in the oven. 350 for about 15 minutes.

      I used plain tortilla chips and found it to be a little bland. I wound make again with more spice and the nacho chips. Easy to make on a tight schedule.

      The first time I made this I liked it so much I wanted to lick the dish The first time I made this I liked it so much I wanted to lick the dish! Followed the recipe exactly, and two weeks later I'm making it again. Definitely something I will make frequently.

      Made with Dorito/salsa tortilla chips and medium picante sauce, I personally thought this was a bit too spicy for me, but my husband thought it was worth making again. The next time I will try it with plain tortilla chips (a recipe option) and perhaps a little less chili powder.

      Fab recipe. I make this for my hubby and me but as it makes a lot I share with my neighbors and they all love it. I never have to worry about left overs. Didn't change anything, no need as it is so good. Did use the nacho-flavored chips which definitely added to overall goodness. I don't microwave much so did bake in the oven. Just a personal preference.

      Slocook805 you need to look at grocery store. Picante sauce is in the same area as salsas.
