Cherry Cheesecake

When I worked full-time and needed a quick dessert to take to a potluck or a friend's home, this pie was always the answer. You can substitute a graham cracker crust or use another type of fruit pie filling for a change of pace. Even the chilling time is flexible if you're in a big hurry. -Mary Smith Bradenton, Florida

  • 11 ounces cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 1 shortbread or graham cracker crust (8 or 9 inches)
  • 1 can (21 ounces) cherry pie filling


  • In a bowl, beat the cream cheese and sugar until smooth. Fold in whipped topping; spoon into crust. Top with pie filling. Refrigerate until serving.

    When you need an easy, super-quick dessert with the flavors of cheesecake, reach for this one! It disappeared in a flash on July 4th -- wish I'd made two! Next time we are trying lemon pie filling instead.

    My niece wants a cheesecake for her birthday, but they're so expensive. I decided I wanted to make her one. I tested this one the other day and it is fantastic. Everybody loves it. I will definitely be making it again. It was also so easy to make. I can't stress this enough IT WAS SO EASY!!!! Run don't walk to the store and buy the supplies and make this cheesecake.

    Don't listen to that Nelson moron... they would not know their boot hole from a hole in the ground. This is simply a great no-bake cheese cake desert that is beyond easy even my ex-sister in-law who cannot cook to save her life could almost make it. Most requested desert from me for this upcoming Thanksgiving meal.
