Chicken, Nectarine and Avocado Salad

This salad is really summery and comes together very quickly. Using granola adds crunch and makes it different. I've tried using a various types of granola, and our favorites have been those that aren't overly sweet but have lots of nuts. —Elisabeth Larsen, Pleasant Grove, Utah

This salad is fresh, tasty and easy to make! I never thought about combining nectarines and avocados, but the flavors work well, especially with the poppy seed dressing. Vary the flavor by varying the granola on top. Sliced almonds add a nice crunch, too.
