This cheesy casserole uses several of my family's favorite ingredients, including macaroni, kidney beans, tomatoes and cheese. Just add a leafy salad for a complete meal. —Marlene Wilson, Rolla, North Dakota
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles
1-1/4 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded reduced-fat Mexican cheese blend
Thinly sliced green onions, optional
Directions
Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, tomato paste, chiles and seasonings. Drain macaroni; add to beef mixture.
Transfer to a 13x9-in. baking dish coated with cooking spray. Cover and bake at 375° until bubbly, 25-30 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, 5-8 minutes longer. If desired, top with sliced green onions.

Simple and delicious dish. As I was tasting it during cooking, I felt it needed ‘just a little something’, so I added a half a chili packet, and a little cayenne for heat (we prefer a little kick); completely did the trick.

This was easy and delicious. I used ground chicken and left out the green chili's because none of like them. I will be making this again.

This is nothing more than goulash with the spices modified. Ingredients and cooking instructions nearly exact match. This sucks as our family hates goulash. When I chili mac I think steak and shake. I was really hoping this was going to be some what like that but it isn't. It was still very lacking in flavor beyond tomatoes and cheese. Easy to make but not impressed with it.

I believe the recipe calls for too much tomato paste. An entire 6 oz. can is alot when 1 or 2 tablespoons would suffice. I added more spices, two salsa peppers and 1 cup diced green peppers. Overall it was still very bland. If I make this again I would greatly reduce the tomato paste and use enchilada sauce instead.

My mother in law gave me this recipe minus the chilies in the 1960's. It was called Saturday Nite Beans. My family has eaten this ever since. It's great for potlucks too.

when I made this I used chili o seasoning mix I did some fire roasted tomatoes green chiles then I got from the zesty chili diced tomatoes then the reason for baking it because when you put all the seasonings into your hamburger and you want it to season really good but this is so so good but use chili seasoning mix that's why I did that cuz I knew it wouldn't be season that good try this with your own chili mix your own diced tomatoes whatever you want to use because it turned out awesome and bake it because the seasonings baked through it and it was so yummy
