Chocolate Nut Cookies

Folks are quick to grab one of these cookies when they see they're chocolate. Once they discover the nuts and vanilla chips, they grad a second and sometimes a third. This recipe moved with me from Kentucky to Arizona and now to Ohio! — Farralee Baldwin, Centerville, Ohio

Ingredients

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white baking chips
  • 1 cup chopped almonds

Directions

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and extract. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the chips and nuts.
  • Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375° for 7-9 minutes. Cool on pans for 1 minute before removing to wire racks to cool completely.

    These are delicious! I keep "ready to bake" cookies in the freezer at all times and loved adding these to the traditional chocolate chip and peanut butter! Definitely a winner!

    If you like almonds, you'll love this recipe. I think I might have added a little more than a teaspoon of almond extract. The crunchy almonds added good texture and the white chocolate chips make the cookie look interesting.

    I made several different cookies this Christmas from this site and my husband has liked them all but this one he said was the best yet!

    These are just blah and way too salty.I would greatly modify this recipe. I would use only 1 stick of butter, omit the salt and baking soda, and perhaps use baking powder instead.

    Very easy and the almond extract adds a wonderful flavor. Didn't use the vanilla chips (don't like things too sweet). Still great. Gives you just the chocolate taste you crave even at Christmas.
