Chocolate Toffee Peppermint Cookies Recipe photo by Taste of Home
1/2 cup peppermint crunch baking chips or 1/4 cup white baking chips plus 1/4 cup crushed peppermint candies
Directions
Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Stir in toffee bits and baking chips.
Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Flatten slightly with bottom of a glass. Bake until golden brown, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to cool.
Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving or, if desired, reheat on a baking sheet in a preheated 350° oven 3-4 minutes.

These were delicious. The toffee tidbits and crushed peppermint made them nice and crunchy. Very Christmas like!

I made these this morning and they came out thin and flat. I bake cookies at a nursing home and we were all so excited to try these out and give the home a wonderful treat. Besides going flat, the peppermint pieces got stuck in our teeth. I'm curious as to why this recipe calls for baking powder instead of baking soda and can that be the problem with how these cookies turned out? They do have a nice flavor and smell wonderful cooking but I wasn't at all happy with how they turned out.
