Ingredients

  • 2 cups semisweet chocolate chips
  • 1-1/2 cups heavy whipping cream, divided
  • 1/4 cup confectioners' sugar
  • 1 tablespoon vanilla extract
  • 1 chocolate crumb crust (9 inches)
  • Whipped cream and chocolate curls, optional

Directions

  1. In a large microwave-safe bowl, combine chocolate chips and 1/2 cup of cream. Cook on high until smooth, 1-2 minutes, stirring every 30 seconds. Stir in sugar and vanilla. Cool to room temperature.
  2. In a large bowl, beat remaining 1 cup cream until soft peaks form. Gently fold into chocolate mixture, one third at a time. Spoon into crust. Refrigerate at least 3 hours before serving. If desired, garnish with whipped cream and chocolate curls.

Chocolate crumb crust (9 inches): Combine 1-1/2 cups finely crushed chocolate wafers (about 30 wafers) and 1/3 cup melted butter. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 350 until set, 6-8 minutes. Cool on a wire rack before filling.
