Cilantro-Lime Rice
My family's favorite Mexican restaurant serves a similar rice as a side dish. I threw this together one night when I was making fajitas, and everyone loved it! It's such an easy side dish and pairs well with kabobs on the grill, too. —Robin Baskette, Lexington, Kentucky

Very good. I used a bouillon cube, 1 TBS Butter, and water instead of chicken broth to make the rice. Added tsp red pepper flakes. Nice addition to standard white rice. After cooking and cooling rice, added juice of 1 fresh lime and 1/2 cup cilantro leaves chopped. Will make it again.
This looks awesome! I have a couple of questions: 1. I am using a rice cooker. My rice cooker instructions admonish me not to use any ingredients other than water and rice in the cooker. Can thee ingredients be added in after the rice cooks? I use this method a lot, and since the rice cooker will stay on and keep the rice warm, in essence, this acts to "cook" my ingredients into the rice. Will this work for your recipe? 2. How much uncooked rice are you starting out with in this recipe? The recipe has measurements for all the other ingredients, but not the raw rice. Thank you!
Very good. My family loved. I did not have jasmine rice, so I made it with basmati. It turned out well and did not stick together. We added additional lime to taste when eating. I have already made this twice, by request!
I love these flavors together, and it’s pretty versatile as a filler for enchiladas, tacos, burritos. Will make again!
Good alternative to plain rice.
Really good and simple. I used brown rice and added black beans. I will add more cilantro and more lime juice next time.
