Heaven!! I make brittle often, but Im going to start adding cinnamon. So good!!
This recipe is a fantastic treat or holiday gift! A pretty package and some gilt-edged ribbon make this pretty-as-a-picture peanut brittle look pretty enough for the Queen of England. The first time I made this with my mom, it took no time at all for my family to crunch it all up!

This was one of the first brittle recipes I ever made. It turned out great! Easy to prepare. Simple directions. Great taste. I have since started to add a dash of red pepper to kick up the spicy cinnamon flavor. Every ones this recipe. It is also great to take to parties/potluck because it is usually the on brittle on the dessert table!
Very easy recipe! If you like peanut brittle that's LOADED with peanuts, follow the recipe. If you like the crunchy candy portion a lot, I'd only use a cup of peanuts.
Too many peanuts for the amount of sugar/syrup mixture.
I don't know if I would make this again, but I gave it the benefit of the doubt. This was easy, good and made pretty toffee, but I wasn't blown away. I did use unsalted nuts, so maybe salted would've been better.
My old recipe was for a lower wattage microwave--this update with shorter cooking times for an 1100 watt microwave and the addition of cinnamon is wonderful! So easy!
To the folks who struggled with this recipe - don't give up on it!! It's really good, if you have a little patience with it.I was ready to throw it in the trash - by the time I needed to add the baking soda, I could barely get the spoon through it (I BROKE a measuring spoon just trying to scrape the excess off!) I was too busy to just throw it away (sounds odd, I know!) so I actually put it in the pan, and tossed it in the oven (it was already baking something else) at a low temp (250) for a few minutes (I didn't time it...but checked it until it was spreading in the pan and the candy looked "normal").This got rave reviews from people I work with, and I even liked it. I will definitely make it again, however I will decrease the amount of peanuts because there were far too many for my liking. Loved the hint of cinnamon, though!!
