We have made this candy every Christmas since I was a child. The cinnamon oil can be difficult to find, but this year we found cassia cinnamon oil food grade ESSENTIAL oil. That was a huge fail. The flavor wasn't the same (aka inedible), and it turned out chewy. One thing we have always done is make a sheet of powdered sugar on our kitchen counter. We make it thick enough that when poured the candy won't go through to the counter. We also build up the sides so the candy doesn't run off the powdered sugar. (This is done while the candy is cooking.) Pour the candy onto the powdered sugar. Then when the candy is still pliable, we use scissors and cut it into long strips. Then we can break the strips into bite size pieces. It looks more uniformed and very easy to pop one into your mouth. Once all the candy is broken into bite size pieces, we mix it into the powdered sugar then put handfuls into a sifter to get the excess powdered sugar off. This also helps keep the tiny pieces from getting into your candy jars and gives it a neater look. It is a few extra steps, but really makes a difference in storage and appearance.

This recipe looks amazing and so simple to make. There have been a couple of questions that I might hazard an answer on. 1. Second batch of candy did not harden. I would assume this candy making process can be adversely affected by the weather, specifically the humidity, at the time of making. It’s a well known fact by candy makers that Divinity candy will NOT set up properly in higher humidities. I’d assume the same would affect this Rock Candy. I’d wait to make it until a lower humidity day comes along. 2. Finished, stored candy all stuck together. Because of the nature of the candy, some sticking would be almost unavoidable. To minimize it, be sure to sprinkle the finished pieces liberally with powdered sugar as the recipe shows and store in an airtight container in a cool, dry (think humidity again) place.

Great recipe. Candy was super easy to make and break into pieces. Tastes wonderful. In the recipe, it warns about the strength of the cinnamon oil. They're NOT joking. I thought I was far enough away but the oil smell still burned my nosehairs and made my eyes water. No big deal. I'll definitely be making this again.
Would it be possible to wintergreen oil or even peppermint instead of cinnamon oil? This sounds easy, but would like more than just cinnamon.
