Coconut Toast

This toasty bread has a wonderfully sweet and buttery coconut topping that's simply scrumptious. "It's easy to make and so yummy," says Betty Checkett of St. Louis, Missouri. "Enjoy it with a cup of coffee at breakfast or for a snack anytime of day."

Ingredients

  • 1 cup sweetened shredded coconut
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 11 to 12 slices white bread

Directions

  • In a bowl, combine the coconut, sugar, butter, egg and vanilla; mix well. Spread over each slice of bread; place on ungreased baking sheets. Bake at 350° for 15-20 minutes or until lightly browned.

    Thank you so much for the recipe for the coconut toast. My great aunt lived in St. Louis and had one job her entire life, working at Teutenberg’s. She started at 17, went part-time 75 and retired at 79. The toast with french bread is just as I remembered as a child.

    I love coconut toast with coffee anytime. We used to get it at Harter's Bakery, MO. Glad to find a quick easy recipe. I suggest using bakery French or Italian bread and real butter. Great!

    Being St Louis natives my family loves Coconut Toast and this was the first recipe that tasted BETTER then the toast I grew up on. Watch out Federhofers Bakery. Delishh!

    I remember my mom making this when my daughter was a baby. That was when it first came out in the magazine. My "baby" is now 17! I have been looking for this one!!
