Contest-Winning Stuffed Pepper Soup

This is an excellent example of how convenience foods can be combined for a tasty entree. Ready in minutes when I get home from work, this soup becomes part of a balanced meal with a tossed salad, rolls or fruit.   • 1 package (8.8 ounces) ready-to-serve long grain and wild rice
  • 1 pound ground beef
  • 2 cups chopped green pepper
  • 1 cup chopped onion
  • 1 jar (26 ounces) chunky tomato pasta sauce
  • 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
  • 1 can (14 ounces) beef broth


  • Prepare rice according to package directions. Meanwhile, in a large saucepan, cook the beef, green peppers and onion until meat is no longer pink; drain. Stir in the pasta sauce, tomatoes, broth and prepared rice; heat through.

    This recipe was simple to make, the hardest part was cutting the onions. I substituted ground turkey for the beef and used whatever marinara sauce I had on hand. I also added some garlic salt and pepper to it and served it with garlic naan bread. Would definitely make again.

    Love this recipe! I did cook the peppers and onions a bit before combining. Easy to throw together (especially with precooked rice) on a weeknight and a hearty dish for the family. Will be making again.

    I used mild ground Italian sausage and regular long grain white rice. I cooked the rice as per the instructions. I did saute the onions and green peppers for a few minutes before adding the other ingredients. Very good I will make it again.

    I made this as written and it was very good. I think when I make it again I will cook the peppers and onions a couple of minutes and then add the ground beef so they are a little softer. Very easy to make.

    Question. I'm not supposed to have rice or pasta (so I can't make that substitution). Does anyone have a suggestion? What about riced cauliflower added at the end?

    Delicious and satisfying. Perfect as written but did add the seasoning packet that came along with the long grain and wild rice. Will definitely be making this again. Thanks for sharing!!

    Super-quick and delicious... just like the inside of a stuffed pepper. Next time I'm going to do only about 1 cup of rice as I feel the rice soaked up too much liquid. Don't forget to make a loaf of bread with this meal!
