- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup 2% milk
- 2 large eggs, lightly beaten, room temperature
- 1/4 cup canola oil
- Preheat oven to 400°. In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. Stir in milk, eggs and oil just until moistened.
- Spoon into a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes.
