Creamy Sausage-Mushroom Rigatoni

In Rome, we dined near the Pantheon. The amazing restaurant is now history, but its memory lives on in this tasty pasta with mushrooms and sausage. —Barbara Roozrokh, Brookfield, Wisconsin
  • Total Time
    Prep/Total Time: 30 min.
  • Makes
    6 servings

  • 1 package (16 ounces) rigatoni
  • 1 pound bulk Italian sausage
  • 2 teaspoons butter
  • 1 pound sliced fresh mushrooms
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups heavy whipping cream
  • Minced fresh parsley, optional

  • Cook rigatoni according to package directions.
  • Meanwhile, in a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain and remove sausage from pan.
  • In same skillet, heat butter over medium heat. Add mushrooms, garlic, salt and pepper; cook, covered, 4 minutes, stirring occasionally. Uncover; cook and stir 2-3 minutes or until mushrooms are tender and liquid is evaporated.

My fiance and I absolutely LOVE this recipe!!! SO simply and SO delicious. I keep the mushrooms separate because he doesn't like them, so I just add them back into my dish. The sauce could easily be used for so many things!

I wanted something to make with Italian sausage but I did not have tomatoes or tomato sauce to use so I searched and searched and searched until I found this recipe. Yum! The flavors were wonderful in this dish. I followed the ingredients but added spinach at the last step. The sauce is one I will use in the future on plain pasta also. This is definitely a keeper!

Today I didn't know what to make... I had fresh italian sweet sausage & mushrooms..I didn't want to go out to the store. This recipe sounded is a very good quick meal. Flavorful, my husband asked if there was enough for Jack. So when Jack walked in he said it smelled like an Mediterranean Kitchen....he ate a big bowl...asked for the recipe. The only thing different I did (out of habit) I chopped a small onion so that went in. I saved the recipe it will be a great meal for a group...hard crusty bread with cold salted butter ???? yum

EXCELLENT meal! There is no need to make a ROUX since the cream will thicken up if you leave it alone and let it cook a little longer. Thank you so much for sharing with us!

Whole family of picky eaters lived it. Followed the recipe all the way then added mozzarella cheese on top and put it in the oven to melt, came out amazing.
