Creamy Sweet Potatoes

I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite. —Norma Poole, Auburndale, Florida

  • 5 pounds sweet potatoes, peeled and cooked
  • 4 large eggs, lightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Dash salt
  • 1 cup miniature marshmallows


  • In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish.
  • Bake at 350° until set, 35-40 minutes. Top with marshmallows; return to oven until they just begin to puff and melt, 5-10 minutes.

    I was given this recipe in 1997 from a co-worker and have refereed to it ever since. I have to say that this is the best recipe. My family just loves it. I have altered this recipe several times and still come back to the basis recipe to regroup. This is not just for holidays but anytime craving sweet potatoes. Hope everyone enjoys. I know we do.

    Made it for dinner tonight. We both over indulged with 2 helpings. Made it as close to the recipe as possible. One of the best sweet potato dishes we have made. We will have this as an all year around dish.

    Not for Thanksgiving! On its own, this dish tastes fine - but it did not go well with our traditional dishes around turkey. Perhaps this should be a side dish to pork? I had been looking for something different and away from the regular candied sweet potatoes, but this too, falls on the sweet side - yet is not complementing sage.

    Beve36, you didn't want to rate a recipe you hadn't tried. That is admirable. However, your 1 star rating pulled the average star rating for this recipe down. I know that's not what you intended. I just wanted others to know that by rating a recipe that you haven't made it they make it harder for the rest of to find good recipes. I would encourage the webmaster to allow comments, questions, etc. in a way that would not skew the ratings results.

    This sounds so good. But I have a family that don't eat sweet potato except for me and one other. 10 to 12 servings is way to much. I wouldn't know how to cut it down for 2 of us.I'm giving it one star because they require a star. It is not fair of me to judge something I have not tried.
