Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly.
In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture.
Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

The taste sweetness level, is that of Fig Newtons. I use 1/4 cup of fig jam, then added 1/2 capful of fig extract. I also doubled the baking soda. I use a pie plate to bake it, it was a little jiggly when it came out. Mine was nice and moist. No crumbs.

As is this recipe is a great place to start.
To suite my taste and cut down on calories, I cut both the brown sugar and white sugar amounts in half. In my opinion, dates are already fairly sweet. To the date mixture, I also added 1/4-1/2 teaspoon of salt and 1 teaspoon of lemon juice after cooking. I followed the rest of the recipe exactly. As other people have mentioned the crust is a little crumbly, but I didn't mind. I thought it had a nice crunchy texture, though a little messy to eat. However, the date mixture is hard to spread without pulling up the bottom crust. I ended up using my fingers which worked better than a spatula. After baking, I cooled the bars to room temp and then moved to the fridge for 30 mins for easy cutting, as suggested by another reviewer. Overall, I think they turned out great! Definitely addicting!
Already thinking about making again, but I would probably double the amount of dates (and water) just to get more filling or add a 1/2-1 cup of dried chopped apricots.

Made my house smell great! Glad I used the whole egg as previously suggested although crust mixture was still so dry that I also added 1Tbsp of water. For me and other's adult taste buds, I would decrease the filling's sugar by at least 25%. And chill completely in the refrigerator before cutting to get neater-looking bars.

Beautiful bars, I made them vegan by omitting the egg white and substituting some soya milk. May even add some finely chopped walnuts to the oat mixture next time to add texture. Loved them. Will make time and time again.

We love old fashioned date cookies, but those pinwheels are so time consuming, I just never make them. These give the old fashioned taste, with a lot less work! So happy to have found this recipe!

Have made these twice and really enjoy them. First time we used unsweetened cooked dates and 3/4 cup brown sugar. And just recently with homemade sweetened applesauce for the filling and the full cup of sugar. Both times we used a whole egg and some walnuts. Quite a versatile recipe!

This is the first date dessert I've made and I'm convinced it won't be our last! I listened to the other reviews and added toasted walnuts to the top oatmeal crumbs for a crunch. Husband had two big bars before they even cooled. I will be making again, although may add raspberries or chopped apricots next time. Yum!
