Easy Corned Beef and Cabbage

This corned beef and cabbage slow cooker recipe is a fuss-free way to cook the traditional dish. I tried it for St. Patrick's Day a few years ago. Now it's a regular in my menu planning. This is terrific with Dijon mustard and crusty bread. —Karen Waters, Laurel, Maryland

  • 1 medium onion, cut into wedges
  • 4 large red potatoes, quartered
  • 1 pound baby carrots
  • 3 cups water
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 2 tablespoons sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon pepper
  • 1 corned beef brisket with spice packet (2-1/2 to 3 pounds), cut in half
  • 1 small head cabbage, cut into wedges


  • Place the onion, potatoes and carrots in a 6- to 7-qt. slow cooker. Combine the water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet; pour over vegetables. Top with brisket and cabbage.
  • Cover and cook on low for 8-9 hours or until meat and vegetables are tender. Discard bay leaf before serving.

    The only word to describe this dinner is awful. The corned beef was good but the vegetables had no taste and the cabbage even lost all of it's color. Try a different recipe.

    I am not a cook! I make excellent reservations. :) With the pandemic of 2020, I am forced to cook at home. Totally surprised myself and my husband by successful making this delicious dish. If I can make it, you can too. I cooked it in the crock pot on high....done in five hours. I checked the meat with a meat thermometer to make sure. The meat fell off the fork and was tender. Others said eight to nine hours for cooking. I also eliminated the potatoes to reduce the carbs...therefore, the recipe I THINK is Keto approved. Definitely impressed myself and my husband. I will make this recipe again.

    Why does everyone have to put sugar in entrees. Skipped sweet and sour ingredients and substituted one bottle of beer for part of liquid. My slow cooker runs hot. Cut time to 7hours. Came out juicy and full of flavor

    I have made this exact recipe for years. It is mouth watering delicious. The only thing I do differently, is I add turnips or rutabagas.

    I made this the other night and had some fantastic compliments! I added 2 teaspoons of coorainder seeds in addition as per another recipe’s suggestion. It goes great with homemade soda bread!

    I cooked the corned beef and vegetables (except the cabbage) for only 7 hours, which was just right. I followed an earlier suggestion and kept the meat and vegs warm in a low oven while the cabbage cooked on the stove in the spiced cooking liquid from the crock pot. Everything was cooked perfectly and tasted delicious. Four stars for the recipe as written, five with the shorter cooking time and stove-top cabbage modification.

    So Yummy!!! Worth the tad bit of work to make it. Just make sure you have a sharp knife on hand to cut the beef in half. :DIf your corned beef does not have a seasoning packet, put the juice from what it was packed in it.Some companys put the seasoning in packets, others just pack it in the seasoning to add more flavor to it. It took me a while to figure that out. Also I talked to someone in the business and they confirmed my thoughts.Hope this helps someone.

    The corned beef I bought didn't come with a spice packet. Does anyone know the actual spices that are in it so I can add them myself?
