Easy Grilled Squash

This is grilled butternut squash recipe is one of my favorite ways to cook with fresh produce. I usually make it when I am grilling steak or chicken. —Esther Horst, Monterey, Tennessee

Ingredients

  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small butternut squash, peeled and cut lengthwise into 1/2-inch slices

Directions

  • In a small bowl, combine the oil, garlic, salt and pepper. Brush over squash slices.
  • Grill squash, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender.

2 slices: 178 calories, 10g fat (1g saturated fat), 0 cholesterol, 156mg sodium, 23g carbohydrate (5g sugars, 7g fiber), 2g protein. Diabetic Exchanges: 1-1/2 starch, 1-1/2 fat.

    Undoubtedly better on a hardwood coal bbq than on a gas grill but not bad. 3-4 minutes per side is utopia however, unless you like your squash "rare" and crunchy... I ended up finishing mine on the high grill, away from the burners. BTW, well cooked, the butternut skin becomes perfectly edible. Saves a lot of cumbersome peeling time and it's probably healthier too.

    This recipe was super easy to make (except cutting up the squash). I had a very small squash and should have cut the garlic down. Other than that, great idea! It was nice and sweet as well. Thanks!

    This was so easy. Great for late summer. I would add more garlic next time.
