Favorite Meat Loaf Cups

My family enjoys meat loaf, but sometimes I can't spare the hour or more it takes to bake in the traditional shape. A quick alternative is to divide the meat mixture into muffin cups for individual servings that are ready in less than 30 minutes. —Sue Gronholz, Beaver Dam, Wisconsin

Ingredients

  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/2 cup crushed cornflakes
  • 4 tablespoons dried minced onion
  • 1 teaspoon prepared mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds lean ground beef (90% lean)
  • Additional ketchup, optional

Directions

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well.
  • Press into 12 foil-lined or greased muffin cups. Bake at 350° for 25 minutes or until a thermometer reaches 160°. Drain before serving. Drizzle with ketchup if desired.

    I have only made meatloaf this way for years. I use breadcrumbs instead of cornflakes and add a little horseradish to the mix with shredded carrot and parsley. No ketchup or mustard in the beef mixture, but I make a mix of ketchup, mustard and brown sugar as the topping for the last 5 minutes of baking. So good and so much quicker than traditional meatloaf!

    Such a great and easy recipe! Made as written, except used fresh minced onion instead of dried and panko crumbs since I didn't have any cornflakes. They came out moist and tender and family loved them. I did add a little brown sugar and mustard to the additional ketchup and brushed it on before baking. A keeper for busy weeknights....or anytime!

    I used it as a filling for stuffed peppers. In this case, I'd lower the temperature and cook longer so the peppers would be soft as butter. Very good.

    I always use Chili sauce instead of ketchup, it has more twang, also use breadcrumbs instead of cornflakes.

    I will never make the traditional way again. This was so good! I used 1 lb. ground beef, 1/2 cup crushed saltines & adjusted the remaining ingredients since it's just my husband and I. I combined brown sugar, ketchup and a dab of mustard for a topping. YUM!

    Made 2 1/2 batches and served a family of 8 with very few leftover. They went over great. Moist and delicious. The 4 yr. Old and 2 yr. old ate without a fuss.

    I added grated carrot and minced fresh onion (omitted dried onion) . Very easy to make ahead and freeze for the week ahead as the family is often on different schedules.
