Freezer Sweet Corn
Total TimePrep: 30 min. Cook: 15 min.
I used this to put up corn from my garden this summer. I just tried some of it and it was delicious. A very easy good way to put up that garden corn for winter!
I can't rate as have never used this Recipe. Simple for us we set up the large cooker outside (propane) bring the Lg Kettle to a boil, cook 12 ears at a time for 3 min, pull up steamer basket and dump corn into a cooler of Ice Water when it's cooled goes on a cookie sheet. Work on the Picnic table. I have a chunk of wood with a nail press the base of the cob into it for sturdyness place in lg bowl and start cutting the corn off! When it gets to full dump to another when all done 2 cups to a Food Saver bag freeze for a bit for the juice then seal!!! Hose off the Picnic Table & etc. All done!! May try some not blanched !!
Why is there any need for a recipe? I cut fresh corn from the cob, measure two cups into quart size freezer bags, press out as much air as possible, seal the bags and freeze them flat. No need to blanch, season, etc. Have been doing it this way for years and use it for soup, casseroles, any recipe that calls for corn. Why add salt or sugar, or butter? I wouldn't butter corn before I added it to a pot of soup.
I learned this method from my husband's grandmother, years ago, and have used it since. However, over the years I have quit adding sugar, as corn has gotten sweeter with the multicolor corn. Why add sugar when you don't need it, right!
I am making this right now and I am not sure what to do with all the liquid? Do you add it to freezer bags or strain? HELP!!

Very Easy to do when you have young children. I switched to this recipe that doesn't use scalding water when our children where younger and never used the hot water method again. :) Also much more relaxing if you have interruptions. No hot water waiting on the stove. You can always skimp on the sugar and butter if you prefer.
This is a delicious way to freeze corn and is a wonderful way to preserve that fresh corn taste to enjoy months later!!!
The very best corn ,family loves it .l don't agree with the one reviewer you must put the sugar & butter in and cook it a little .otherwise it will not be sweet creamy and o so good it will be just plain old frozen corn compliments to the creator of this recipe .
I have misplaced this recipe on Yahoo! Here it is, this is the best and only way to freeze our corn. Making this for friends in Arizona who wants to take some back home at Christmas time, promised them I'd make it for them if they leave room in their cooler full of our delicious Iowa CORN fed beef!
