Garlic Salmon Linguine

Ingredients

  • 1 package (16 ounces) linguine
  • 1/3 cup olive oil
  • 3 garlic cloves, minced
  • 1 can (14-3/4 ounces) salmon, drained, bones and skin removed
  • 3/4 cup chicken broth
  • 1/4 cup minced fresh parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Directions

  • Cook linguine according to package directions; drain.
  • Meanwhile, in a large skillet, heat oil over medium heat. Add garlic; cook and stir 1 minute. Stir in remaining ingredients; heat through. Add linguine; toss gently to combine.

Count on serving 2 ounces of linguine per person. We have a “trick” for easily measuring out this amount: Consider the diameter of a quarter, then stand a handful of linguine on-end, vertically, in your fist that looks about that size.     I'm not going to lie, I've never cooked with canned salmon before in my life. I live in Puerto Rico and the municipality gives us boxes of free food which is an amazing gift!! Canned salmon is one of those.... I added twice the garlic and about half the pasta. On the plate, I added a drizzle of olive oil, grated parmesan salt and pepper.

    Definitely easy, but lacks much flavor. I’m looking for “pantry” meals, without the addition of pesto, grated Parmesan. and a pink sauce, no one in my family would’ve eaten this. I also used leftover grilled salmon, it overpowered the pasta.

    Great basic recipe without a cream base. Used left over grilled Sockeye and added halved cherry tomatoes and broccoli to get some veggies in. Quick, easy and delicious.

    Delicious, easy to follow and inexpensive. I didn't have linguine so I substituted it with spaghetti. Just as good. Thank you for sharing this recipe.

    This was surprisingly delicious. I was looking for something to make with canned salmon besides salmon cakes, and I’ll absolutely make this again. My 6-year-old loved it, and my 10-month-old was cracking us up, he was shoveling it in so fast! Only adjustments were more garlic and more [garlic] salt.

    This recipe was so easy and very tasty, I used dried parsley (added to the broth and cooked for a bit longer)
