When Amy Hornbuckle first tried these savory bites, she knew she found a new favorite. "They'd be a great way to get my young daughter to eat her vegetables if they were a bit lower in cholesterol," shares the Prattville, Alabama reader.

Ingredients

  • 2 cups crushed seasoned stuffing
  • 1 cup finely chopped onion
  • 4 large eggs, lightly beaten
  • 3/4 cup butter, melted
  • 1/2 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1-1/2 teaspoons dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

Directions

  1. In a large bowl, combine the first nine ingredients. Stir in spinach until blended. Roll into 1-in. balls. Place in a greased 15x10x1-in. baking pan. Bake at 350° for 15-20 minutes or until golden brown.
