Ham and Cheese Muffins

Serve these savory biscuitlike muffins for breakfast, at snack time or along with a hearty bowl of soup. —Doris Heath, Franklin, North Carolina

  • 2 cups self-rising flour
  • 1/2 teaspoon baking soda
  • 1 cup 2% milk
  • 1/2 cup mayonnaise
  • 1/2 cup finely chopped fully cooked ham
  • 1/2 cup shredded cheddar cheese


  • In a large bowl, combine flour and baking soda. Combine remaining ingredients; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full.
  • Bake at 425° until toothpick inserted in center comes out clean, 16-18 minutes.
Editor's Note
As a substitute for each cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup.

    Very dense. Tbe end result is more similar to a biscuit than a muffin. It's a pretty good biscuit recipe, but not a very good muffin one.

    These are good with soup. On their own, they're rather plain. I've made them twice now. The base is good, but I think I'm going to experiment with adding mustard powder and more cheese next time.

    I made these to go with potato soup and they were delicious! Also great for snacks, tailgating or brunch!

    I made these as a grab and go meal for a recent family vacation and they were very good!!! Everyone loved them and they went fast. I liked them because they were very easy to make. I will be doubling the batch and freezing some next time.

    I have made this several times, super easy and it always gets great reviews. I usually double it, because they go fast!

    what a great simple recipe. only 6 ingredients and mixes up quickly. The best part is that it freezes extremely well so I made up 3 batches and now my husband, son, and daughter have fast grabs for breakfast. They each have their own way to eat it: one with mustard, one with salsa, one plain, and I like mine with a little homemade strawberry jam. It's much healthier and cheaper than fast food breakfasts!
