Hash Brown Egg Bake

Ingredients

  • 1 package (30 ounces) frozen cubed hash brown potatoes, thawed
  • 1 pound bacon strips, cooked and crumbled
  • 1 cup shredded cheddar cheese, divided
  • 1/4 to 1/2 teaspoon salt
  • 8 large eggs
  • 2 cups whole milk
  • Paprika

Directions

  • In a large bowl, combine the hash browns, bacon, 1/2 cup cheese and salt. Spoon into a greased 13x9-in. baking dish. In another large bowl, beat eggs and milk until blended; pour over hash brown mixture. Sprinkle with paprika.
  • Bake, uncovered, at 350° until a knife inserted in center comes out clean, 45-50 minutes. Sprinkle with remaining cheese.

Egg casseroles are perishable and should be cooked within 2 days. If you'd like to enjoy your egg casserole for longer, consider freezing it. Uncooked egg casseroles can be tightly covered and frozen for up to 2 months.

Do you bake a casserole covered or uncovered?

It depends on the casserole recipe, so always follow the instructions. For this hash brown egg bake, we recommend baking it uncovered at a temperature of 350°.

    I read the reviews before hand and it seems its a delicious bake, but is somewhat dry and lacks spices. I used 1/2 and 1/2 instead of the milk and added more spices, and cheese. I placed the recipe in my special occasion file. Delicious!!!

    This was a great recipe but I read the reviews beforehand and added garlic, onion, doubled the cheese and used cream instead of milk and it was delicious. Probably more fattening but it isn’t something I make everyday. It is a treat for the family.

    Due to remarks, I added slightly more cream, which I prefer to milk for these egg dishes. I also added about 1/3 c. Finely chopped onion, and about 2 T. of spicy mustard, because I didn’t have Dijon. I also used peppered-edge bacon within and crumbled on top, so these all added some much needed flavor and my husband did not remark that it was dry (and he would have! Haha)

    Wish I'd read all the comments and suggestions beforehand ... It's tasty but definitely dry vs what I thought it would be. Some onion and garlic powder would have helped... And a little smoked paprika or cayenne (and I cannot tolerate much spiciness) would've helped. Onions and garlic fried with the bacon would be great too. But I often like to make the recipe as is initially... I did use extra cheddar and Applewood smoked bacon though...

    Glad I read the comments ahead of time! I used 8 cups of potatoes, 2 cups of cheese, 10 eggs, and equal parts heavy cream and milk (1 cup of each). I also added 1 Tbsp of garlic powder and chopped dried onions to the potatoes, along with 1/2 Tbsp of salt and pepper and 1 tsp of paprika. Extremely simple and delicious!

    My husband made this for me one weekend. We prefer ham rather than bacon. He used chopped ham. It was super easy for him to make and was rather tasty. We also like the potatoes o'brien with onions and peppers already in it. I think you could add whatever meat you want and any seasonings you want too.

    I made this for a get-together and was very disappointed in it. It was very bland to the point that even a bit of salt didn't help. IF I ever make it again, I will add onions, peppers and anything else that will bring this out of a plate of boredom. I usually love the Taste of Home recipes but this was just too much.
