My husband Dale's grandmother fixed this fluffy marshmallow recipe only for special occasions. Since she had no electric mixer, beating the ingredients by hand for 30 minutes was a labor of love. Now, Dale makes them. They're delicious!

Ingredients

  • Confectioners' sugar
  • 2 cups cold water, divided
  • 4 envelopes unflavored gelatin
  • 4 cups sugar
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla extract
  • COATING:
  • 1 cup confectioners' sugar
  • 1/4 cup cornstarch

Directions

  1. Generously dust a 13x9-in. pan with confectioners' sugar. In a large bowl, sprinkle gelatin over 3/4 cup cold water.
  2. In a large heavy saucepan, combine sugar, salt and remaining water. Bring to a boil over medium heat, stirring occasionally. Cook, covered, 3 minutes. Uncover; cook, without stirring, over medium-high heat until a candy thermometer reads 248° (firm-ball stage). Remove from heat and slowly add to gelatin mixture, beating on low speed until incorporated. Add vanilla; beat on medium until thick and doubled in volume, about 10 minutes.
  3. Spread into prepared pan. Let stand, covered, at room temperature 6 hours or overnight.
  4. Using a knife coated with cooking spray, cut into 1-in. squares. In a large bowl, combine confectioners' sugar and cornstarch. Add marshmallows in batches; toss to coat. Store in airtight containers in a cool, dry place.

To keep homemade marshmallows fresh, place them in an airtight cookie storage container, separating the layers with parchment or waxed paper. Since marshmallows have a high sugar content, you don't want to refrigerate them. If you keep them in a cool, dry place, then they should last for about 3 to 4 weeks. You can also freeze them for up to 6 months.

How do I stop my marshmallows from getting sticky?

If you live in a humid area, you may find your marshmallows getting a little sticky after a few days. To prevent sticking, simply dust them with a little powdered sugar or cornstarch.

How do you rehydrate hard marshmallows?

While it's best to eat marshmallows while they're fresh, sometimes they do dry out a little. To revive them a bit, place a couple of slices of fresh bread in the same container as the marshmallows and seal it up. You can also try microwaving them for 5 to 10 seconds.
