Honey Cinnamon Bars

My Aunt Ellie gave us the recipe for these sweet bar cookies with cinnamon and walnuts. Drizzle with icing, and serve with coffee or tea. —Diane Myers, Star, Idaho

Ingredients

  • 1 cup sugar
  • 3/4 cup canola oil
  • 1/4 cup honey
  • 1 large egg, room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts, toasted
  • GLAZE:
  • 1 cup confectioners' sugar
  • 2 tablespoons mayonnaise
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons water
  • Additional toasted chopped walnuts, optional

Directions

  • Preheat oven to 350°. In a large bowl, beat sugar, oil, honey and egg until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Stir in 1 cup walnuts.
  • Spread into a greased 15x10x1-in. baking pan. Bake until golden brown (edges will puff up), 10-12 minutes. Cool completely on a wire rack.
  • For glaze, in a small bowl, mix confectioners' sugar, mayonnaise, vanilla and enough water to reach desired consistency; spread over top. If desired, sprinkle with additional walnuts. Let stand until set. Cut into bars. Refrigerate leftovers.
Editor's Note
To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.

    I used a 10x15 cake pan, perhaps affected the baking time- took 18-20 min. Other than that, everything was perfect. Like a thin cinnamon blondie, and the glaze is very nice

    This recipe is a winner! I substituted eggs for egg whites and used a caramel extract. It was a quick make and tasted so good with the glaze! The dough wasn't an issue for me. Will definitely be storing this recipe!

    One of my favorite recipes. It goes along well with anything from a cup of tea to a picnic potluck meal dessert. It's simple, I almost always have the ingredients in my pantry and gets rave reviews. This year I am gifting batches of these as our teacher appreciation gift (along with some local honey.)     These are really tasty and really easy to make. Yes the dough is thick and needs to be patted down to spread evenly on the pan, but that is true of many other great recipes as well. I wouldn't put a lower rating on these because of that! They taste delicious and I will definitely be sharing this recipe and making them again myself! Also, I think the person that commented about them being "sugar gritty" must not have properly blended the sugar mixture thoroughly because I didn't notice any grittiness in the end result at all. The texture was perfect!

    My family loves these! Sure they’re a bit tricky to spread in the pan. I found using one size smaller makes the task much easier. They are simple but so delicious!

    I was disappointed in this recipe. I thought the batter was cookie consistency and it said to spread it in the pan. I had to pat it out because it was too stiff. The word "spread" is a little misleading. I also thought they were a little sugar gritty.

    These were a wonderful change from brownies. Great cinnamon flavor and the mayo cut the sweetness of the glaze. I moved them to a smaller sheet pan and everyone loved them. The toasted nuts was a great addition. The dough is thick so the smaller sheetpan helped a lot. As far as bland, I would never call these bland. And they're wonderful with an afternoon cup of tea.

    The batter was to hard to mix up. They tasted good just to thin. Don't think I would make them again.

    Made exactly by the recipe. I'm sorry but I'll not be making this again. As written, the batter is too tight and after baking the bars were gritty from the undissolved sugar.
