Italian Herb Salad Dressing

This vinaigrette is a delicious dressing that I like to keep on hand for topping a variety of salad greens. —Dan Wright, San Jose, California

Ingredients

  • 3/4 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 tablespoon grated Parmesan or Romano cheese
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • Pinch pepper

Directions

  • Place all ingredients in a jar with a tight-fitting lid; shake well. Refrigerate until serving. Shake dressing again just before serving.

    This salad dressing is delicious and so easy to prepare. I usually buy the dry mix but no more. I followed the recipe but cut back on the sugar to ¼ tsp. Also, I substituted Italian seasoning for the oregano and it was delicious. We loved it and I will be making this recipe again and again. Volunteer Field Editor

    I see why you call it Italian "herb" and not herbs. Live a little! There's more to the spice cabinet beyond oregano, Dan.

    Nothing like fresh.. this dressing comes together very quickly. I added some dried Italian seasonings to the dressing. It’s nice and light and very clean tasting. I added extra grated cheese as well. This would also make a nice marinade for chicken . Toh V F editor

    Very good dressing recipe. I replaced the sugar with one tablespoon of honey. Thanks for the good recipe.

    I added honey instead of the sugar and will probably add some more herbs next time. It was simple to make, and pretty good drizzled over pasta salad.

    Very good, I like the cheese in it. Also I used splenda and omitted the sugar. This is my new go to.

    Pretty good. I did use another reviewers suggestion, omitted the sugar and added Tb honey. Upon initial taste, I thought it could use some more of "something". Added some garlic salt and pepper and a tad of dry zesty italian mix - I think next time I would just add the pinch of garlic salt and pepper, yummy!

    Italian dressings are my favorite and this one is very flavorful and easy. My husband prefers blue cheese dressings, but he OK'd this Italian one. I used it to marinate the chicken for the Grilled Chicken and Veggie Kabob recipe; the chicken was excellent.

    I have made this a few times now, the last time I made it I omitted the sugar for one TB honey. Wow what a difference. Great flavor.
