Jalapeno Popper Corn Salad

I created this recipe for a wedding I was catering, and it's a good thing I made buckets of it, because I couldn't stop eating it! This chilled creamy salad combines all the best flavors of jalapeno poppers with the delicate sweetness of fresh corn. —Amanda Miller, Hutchinson, Kansas

Ingredients

  • 1 medium onion, quartered
  • 2 jalapeno peppers
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 ounces cream cheese, softened
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups fresh corn (about 8 ears), cooked and cooled
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1/2 cup crumbled cooked bacon, divided

Directions

  • Grill onion and jalapenos, covered, over medium-high heat or broil 4 in. from heat 3-5 minutes on each side or until lightly charred. Cool completely; chop into 1/2-inch pieces.
  • Combine the next nine ingredients. Stir in corn, cheeses, half the bacon, and the grilled vegetables. Top with remaining bacon to serve.

Test Kitchen tips
  • Since the grill is fired up anyway, consider grilling the corn instead of boiling or steaming it.
  • To make a lower-fat version, use thick plain yogurt instead of the sour cream, and use reduced-fat mayo and cream cheese.
  • If spiciness isn't your thing, substitute Swiss cheese for the pepper jack.

    3/4 cup: 476 calories, 40g fat (14g saturated fat), 47mg cholesterol, 616mg sodium, 18g carbohydrate (7g sugars, 2g fiber), 14g protein.

      I agree with many others - it takes some time to prepare, but it's very good. I made as written and served with a side of smoked sausage

      Could this salad get any better? Maybe if you'd grill all the veggies. I used my own homegrown jalapeño, onion and corn and cooked them inside...superb, even so! I couldn't stop noshing on it while waiting for dinner. Subbed in cheddar and didn't use as much dressing as called for, but that may have been because of smallish ears of corn. Highly recommend...and I cook from scratch and try new recipes all the time.

      This was OK but I was expecting more heat from the Jalapenos. If I make it again, I would increase the peppers and reduce the onions. This recipe makes a LOT.

      My new fave! Can’t wait to make it again for other people!! Followed the recipe and didn’t make any additions but maybe next time I would add some more veggies, maybe peppers

      This is a fantastic salad! Took a tip from the test kitchen and grilled the corn along with the onion. I also threw a red bell pepper on the grill. I didn't have fresh jalapeno, so used the equivalent of diced from a jar. Everything else stayed exactly as written. This was absolutely delicious! My new go-to summer salad. Great for every cookout. Will absolutely, no question, make again!

      The entire family loved this!! I broiled the jalapeno and onion instead of grilling it as we weren't using the grill otherwise and it still tasted amazing. I'm sure grilling it even deepens the flavor. What a winner! We will make this time and again. Thank you!

      Great recipe absolutely loved it. I did grilled jalapenos and put in 4 instead of 2 because most of us like extra spicy. Will definitely make this again.
