Kale Caesar Salad

Ingredients

  • 4 cups chopped fresh kale
  • 4 cups torn romaine
  • 1 cup Caesar salad croutons
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons anchovy paste
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • In a large salad bowl, toss lettuce, croutons and cheese. For dressing, combine remaining ingredients in small bowl; pour over the salad and toss to coat. Serve immediately.
