Lavender Lemon Bars

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 2 cups all-purpose flour
  • 1/2 cup ground almonds
  • 2 teaspoons dried lavender flowers
  • 2 teaspoons grated lemon zest
  • TOPPING:
  • 1-3/4 cups sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 4 large eggs
  • 1/3 cup lemon juice
  • Confectioners' sugar

Directions

  • In a small bowl, cream butter and confectioners' sugar. Add the flour, almonds, lavender and lemon zest; beat until crumbly. Pat into an ungreased 13x9-in. baking dish. Bake at 350° for 15 minutes or until edges are golden brown.
  • Meanwhile, in another small bowl, combine the sugar, flour, baking soda, eggs and lemon juice; beat until frothy. Pour over hot crust. Bake at 350° for 20-25 minutes or until light golden brown. Cool on a wire rack. Dust with confectioners' sugar.
  • Refrigerate leftovers.
Editor's Note
Look for dried lavender flowers in spice shops. If using lavender from the garden, make sure it hasn't been treated with chemicals.

    The crust has a great flavor, but to me the crust to lemon ratio was off. I would make1/2 the crust or double the lemon filling

    I've made this recipe twice per the instructions but both times it's not completely set. The second time I tried cooking it longer and the edges got hard and it still didn't set completely. Any ideas why?

    These bars are delicious! Lavender pairs well with the lemon and adds just a hint of flavor.

    This recipe was easy to make and tastes great. I would recommend crushing the lavender with a mortar and pestle for texture purposes.

    Lavender lemon bars are delicious and so easy to make. My children step in and do whatever they can to make this recipe better, which does not surprise me at all. They're all good cooks and love baking as much as cooking.
