Lavender Lemonade

I never knew you could cook with lavender until I was on vacation in France. I was served a refreshing lavender and vanilla scented lemonade that just hit the spot on that warm, sunny afternoon. —Susan Hein, Burlington, Wisconsin

Ingredients

  • 6 to 7 cups water
  • 1 cup sugar
  • 1-1/2 cups fresh squeezed lemon juice (about 6 large lemons)
  • 2 tablespoons dried lavender flowers
  • 1 teaspoon vanilla extract
  • Ice cubes

Directions

  • Bring 2 cups water and sugar to a boil. Remove from the heat; add lavender. Cover and let stand for 2-4 hours.
  • Strain, discarding lavender. Stir in lemon juice, vanilla and remaining water. Chill; serve over ice.
Editor's Note
Look for dried lavender flowers in spice shops. If using lavender from the garden, make sure it hasn't been treated with chemicals.

    This recipe is delicious and perfect as written. I used fresh squeezed lemons and dried lavender blossoms, and doubled the recipe for my Easter dinner. Lovely!

    I made this one year ago, for my mom's memorial service. I had told her about the recipe while she was bedridden, and she smiled and wished she could have tasted it. She was an avid cook...one of the first to publicly offer recipes to cook using turkey parts (Lisa Bacon's Turkey Cookbook). I made it for her memorial reception and this lemonade disappeared fast. I had several requests for the recipe. I'm so glad I got to use fresh lavender from my garden in honor of my mom. I have heard the English Lavender is the sweetest. I'm using the leaves from this tonight, and hoping for more great results. And, yes, fresh lemon juice is best, but in a pinch I'd use the bottled stuff too. :)

    While I liked it okay, the rest of my family didn't like it. The lavender was just a little over the top for them. Again, I personally would make it again just for me, but not to serve to my family. Fresh lemons were used.
