Mango Chicken Thighs with Basil-Coconut Sauce

I made this recipe as given(I did double it)and it was fantastic! I used a 16 oz bag of frozen(thawed)mango chunks. I thought it would be sweeter, but it was more savory than sweet.(thats good, i actually prefer savory) All the flavors going on there were great. The miso adds a ton of umami, the basil, the garlic,the coconut milk, the ginger the green onions!!!!Uh,Uh,Uh(think Tim the tool man grunts here!)I used a sambal garlic chili sauce(less sugar than the sriracha). The chicken thighs cant be beat,always cooks up to tender, never dry. family enjoyed with the jasmine rice, I skipped rice and went easy on the mango and it was low carb enough to be keto for me! Definitely will make this again.#2 son loved it and is going to add this one to his meal prep rotation as it would freeze well in portioned containers with the rice and sauce over it. Again, excellent!!!
